Makes 9 Brownies

90g (3.2 oz) 70% dark chocolate

75g (2.7 oz) butter

70g (2.5 oz) coconut sugar

280g (9.9 oz) cooked beetroot, chopped

140g (4.9 oz) all-purpose flour

¼ tsp. baking soda

½ tsp. baking powder

2 tsp. unsweetened cocoa powder

250g (8.8 oz) unsweetened applesauce

INSTRUCTIONS.

  1. Preheat Your Oven:
    Preheat the oven to 190°C (375°F). Line a 20 X 20 centimetre brownie pan with baking paper, or use a silicone brownie pan for easy removal.

  2. Melt the Chocolate & Butter:
    Finely chop the dark chocolate and melt it in a small bowl along with the butter. You can do this in the microwave, heating it in 30-second intervals and stirring it between each one until it is fully melted. Once melted, stir in the coconut sugar and set the mixture aside to cool slightly.

  3. Puree the Beetroot:
    Place the cooked beetroot into a food processor and blend until smooth. The beetroot should have a creamy consistency, perfect for adding moisture to the brownie batter without leaving chunks.
