RAW RASPBERRY, PISTACHIO & CHOCOLATE SLICE RECIPE.
Serves: 8
Prep Time: 15 minutes
Chill Time: 60 minutes
Ingredients
For the Base:
1 cup (150g) pitted Medjool dates
1 cup (120g) raw almonds
1/4 cup (30g) unsalted pistachios, shelled
2 tbsp. cocoa powder
1 tbsp. coconut oil, melted
For the Raspberry Layer:
1 1/2 cups (225g) frozen raspberries, thawed
1/2 cup (45g) desiccated coconut
1/4 cup (60ml) maple syrup
2 tbsp. coconut oil, melted
For the Chocolate Topping:
100g (3.5 oz) dark chocolate (70% or higher), melted
1 tbsp. coconut oil, melted
2 tbsp. unsalted pistachios, roughly chopped, for garnish
Extra raspberries, for garnish (optional)
INSTRUCTIONS.
Prepare the Base:
Add the almonds, pistachios, cocoa powder, and pitted dates to a food processor. Blend until the mixture resembles fine crumbs and sticks together when pressed.
Add the melted coconut oil and blend again until fully combined.
Line an 8x8-inch (20x20 cm) square baking dish with baking paper. Press the base mixture evenly into the dish, ensuring it’s packed down firmly. Place in the fridge to set while you prepare the next layer.
Make the Raspberry Layer:
In a blender or food processor, combine the thawed raspberries, desiccated coconut, maple syrup, and melted coconut oil. Blend until smooth and creamy.
Pour the raspberry mixture over the set base, spreading it evenly with a spatula. Return the dish to the fridge to chill for at least 30 minutes or until the layer is firm.
Add the Chocolate Topping:
In a small bowl, combine the melted dark chocolate and coconut oil. Stir until smooth and glossy.
Pour the chocolate mixture over the raspberry layer, spreading it out evenly.
Sprinkle the top with chopped pistachios and a few extra raspberries for garnish, if desired.
Chill & Serve:
Place the dish in the fridge for another 30 minutes or until the chocolate layer is fully set.
Once set, remove from the fridge and slice into 8 bars or squares.
Serve immediately or store in an airtight container in the fridge for up to 1 week.
PRO TIPS FOR PERFECT RAW SLICES.
Use Soft Medjool Dates: Medjool dates are naturally sticky, making them the perfect binder for the base layer. If your dates are a little dry, soak them in warm water for 10 minutes and drain before using.
Choose High-Quality Chocolate: For the topping, opt for dark chocolate with at least 70% cocoa. It provides a rich flavour while keeping the sugar content low.
Customise Your Layers: Don’t have pistachios? Swap them out for walnuts, pecans, or your favourite nut. Prefer blueberries? Feel free to substitute them for raspberries.
Make It Vegan: Double-check your chocolate to ensure it’s dairy-free if you’re catering to a vegan diet.

MAKE IT YOUR OWN.
This recipe is endlessly adaptable. Here are a few ways you can make it your own:
Add a Nut Butter Layer: For an extra indulgent twist, spread a thin layer of almond or peanut butter between the base and raspberry layers.
Switch Up the Fruit: Try blueberries, strawberries, or even mango for a different flavour profile.
Boost the Protein: Add a scoop of unflavored or vanilla protein powder to the base for a post-workout snack.
