Raspberry Slice

Ingredients

For the Base:

1 cup (150g) pitted Medjool dates

1 cup (120g) raw almonds

1/4 cup (30g) unsalted pistachios, shelled

2 tbsp. cocoa powder

1 tbsp. coconut oil, melted

For the Raspberry Layer:

1 1/2 cups (225g) frozen raspberries, thawed

1/2 cup (45g) desiccated coconut

1/4 cup (60ml) maple syrup

2 tbsp. coconut oil, melted

For the Chocolate Topping:

100g (3.5 oz) dark chocolate (70% or higher), melted

1 tbsp. coconut oil, melted

2 tbsp. unsalted pistachios, roughly chopped, for garnish

Extra raspberries, for garnish (optional)

INSTRUCTIONS.

  1. Prepare the Base:

    • Add the almonds, pistachios, cocoa powder, and pitted dates to a food processor. Blend until the mixture resembles fine crumbs and sticks together when pressed.

    • Add the melted coconut oil and blend again until fully combined.

    • Line an 8x8-inch (20x20 cm) square baking dish with baking paper. Press the base mixture evenly into the dish, ensuring it’s packed down firmly. Place in the fridge to set while you prepare the next layer.

  2. Make the Raspberry Layer:

    • In a blender or food processor, combine the thawed raspberries, desiccated coconut, maple syrup, and melted coconut oil. Blend until smooth and creamy.
