Herbed Yoghurt Egg Toast
Some mornings call for something quick. Others call for something nourishing. And every now and then, you want a breakfast that somehow manages to be both — simple to make, yet flavourful and full of goodness.
My Herbed Yoghurt Egg Toast is exactly that kind of breakfast. It’s creamy, zesty, fresh, and wonderfully protein-packed, keeping you full and energised well into the morning. The combination of Greek yoghurt, fresh herbs, and perfectly cooked eggs creates something that tastes far more impressive than the effort it takes to make.
It’s the kind of recipe that fits seamlessly into everyday life. Easy enough for weekdays, yet delicious enough that you could confidently serve it to friends over a relaxed weekend brunch.
And because it comes together in under 20 minutes, it quickly becomes one of those meals you rely on — simple, reliable, nourishing, and always satisfying.
WHY THIS BREAKFAST WORKS.
Healthy breakfasts don’t need to be complicated or time-consuming. In fact, the most balanced ones often come from combining a few everyday ingredients in smart, flavourful ways.
The foundation here is Greek yoghurt, which adds a creamy texture and a great source of protein. Fresh herbs lift the whole dish, adding brightness and flavour without making anything heavy. Lemon zest and juice bring zing and freshness, and the eggs provide long-lasting energy to keep you steady through the morning.
The result is a breakfast that’s balanced and deeply satisfying. It feels light, but it’s packed with protein and healthy fats. It feels refreshing, but it carries enough substance to support steady energy and focus.
It’s the perfect example of how nourishing food can be simple and joyful — not restrictive, not complicated, and definitely not boring.
HERBED YOGHURT EGG TOAST RECIPE.
Serves: 4
Prep Time: 10 minutes
Cook Time: 10 minutes

Ingredients
8 large eggs
1 clove garlic, finely minced
1 medium lemon (zest and juice)
2 tablespoons fresh dill, finely chopped, plus more for garnish
2 tablespoons fresh chives, finely chopped, plus more for garnish
450 g (16 oz) plain Greek yoghurt
4 slices seeded bread, toasted
Sea salt and black pepper
2 tablespoons olive oil
How to Boil the Eggs
Place the eggs in a saucepan and cover with cold water. Bring the water to a gentle boil over medium heat. Once boiling, reduce the heat slightly and cook for 9 to 10 minutes for firm, fully set yolks that slice neatly. Drain and run the eggs under cold water to stop the cooking. Once cool enough to handle, peel and slice.
THE METHOD.
In a medium bowl, combine the garlic, lemon zest, lemon juice, chopped dill, chopped chives, Greek yoghurt, olive oil, and a pinch of salt and pepper. Stir until well mixed and creamy.
Toast the bread slices until crisp and golden. Spread each slice generously with the herbed yoghurt mixture.
Arrange the sliced boiled eggs on top of each piece of toast. Finish with a sprinkle of salt, pepper, and a little extra dill or chives. Serve immediately while the toast is still warm and crisp.
THE MAGIC OF HERBED YOGHURT.
One of the reasons this recipe stands out is the use of Greek yoghurt in place of heavier spreads. It adds creaminess without weighing you down, and when paired with herbs and lemon, it becomes bright, fresh, and full of flavour.
Yoghurt also brings nutritional benefits — protein to support energy and muscle repair, probiotics to support gut health, and a satisfying texture that makes this toast feel hearty without being rich.
The combination of dill and chives is classic and complimentary. Dill brings a soft, aromatic flavour that pairs beautifully with eggs, while chives add a subtle savoury note. When combined with lemon, the mixture takes on a refreshing, almost tangy quality that lifts the whole dish.
It’s an easy spread you can whip up in minutes, and it works beautifully on toast, in wraps, or even spooned over roasted vegetables.
EGGS: A BREAKFAST STAPLE FOR GOOD REASON.
Eggs are one of the most versatile and nutrient-dense ingredients you can keep in your kitchen. They’re rich in protein, vitamins, and essential fats — and they keep you full for hours.
In this recipe, the eggs are boiled until firm and sliced, providing a clean and simple base for the herbed yoghurt. The texture of the eggs contrasts with the creaminess of the spread and the crunch of the toast, creating a beautifully balanced bite.
For a slightly softer yolk, you can reduce the boil time by a minute or two. Just ensure the eggs still hold their structure when sliced.

BUILDING A NOURISHING BREAKFAST ROUTINE.
One of the easiest ways to support more balanced energy throughout the day is to start with a breakfast that combines protein, fibre, and healthy fats. This toast covers all three in a way that feels effortless.
The seeded toast provides complex carbohydrates and fibre, the yoghurt and eggs offer protein and healthy fats, and the herbs and lemon add flavour without the need for added sugar or heavy sauces.
It’s the kind of breakfast that sets you up well for the day — providing steady energy without the mid-morning crash that can follow sugary or overly light breakfasts.
And once you’ve made it once, you’ll find it becomes a regular in your weekly rotation because of how simple but satisfying it is.

WHY FRESH HERBS MATTER.
Fresh herbs have a unique ability to elevate simple ingredients. In this recipe, they’re the key to transforming yoghurt and eggs into something lively and flavourful.
Dill and chives bring a lightness that makes the dish feel vibrant rather than heavy. They also add natural nutrients and antioxidants, making them more than just a garnish.
If you want to change things up, you can add basil, parsley, or even a bit of mint for a different flavour profile. Herbs are flexible and forgiving — they’re there to bring freshness and personality to your meal.
SIMPLE SWAPS & VARIATIONS.
This recipe is versatile enough to evolve with your preferences or whatever ingredients you have on hand.
For a heartier version, you can add avocado slices beneath the eggs. If you prefer more brightness, add an extra squeeze of lemon on top just before serving. If you like more crunch, top the toast with a handful of roasted chickpeas or seeds.
You can also use sourdough, rye, or gluten-free bread depending on what you enjoy most.
This recipe is less about rules and more about guiding you toward a breakfast that feels good, tastes great, and supports your energy throughout the morning.
A BEAUTIFUL MEAL TO SHARE.
Although this dish is quick enough for busy mornings, it’s also a lovely recipe for entertaining. The combination of colours and textures makes it visually appealing, and it has that fresh, inviting quality that suits relaxed brunches with friends or family.
You can prepare the yoghurt mixture in advance and store it in the fridge, making assembly even quicker. The eggs can also be cooked ahead of time, so all you need to do is toast the bread and put everything together when you’re ready to serve.
It’s the kind of meal that feels effortless but still thoughtful — the perfect combination for hosting.
