8 medjool dates, pitted
2 tablespoons cocoa powder
1 teaspoon vanilla extract
For coating:
Extra desiccated coconut
METHOD
Place the dark chocolate and coconut oil into a small bowl and gently melt, either over low heat or in short bursts in the microwave. Set aside to cool slightly.
Add the desiccated coconut, cocoa powder, pitted dates, and vanilla extract to a food processor. Pour in the melted chocolate mixture and process until the mixture comes together into a soft, slightly sticky dough.
If the mixture feels too dry, add a teaspoon of water at a time until it binds easily.
Transfer the mixture to the fridge and chill for around 10 minutes to make it easier to handle. Once chilled, roll into 8 evenly sized balls and coat lightly in extra desiccated coconut.
