CORIANDER & LIME CHICKEN SALAD.
Here’s everything you need to make this fresh and vibrant salad:
Prep Time: 10 minutes Cook Time: 8-10 minutes
For the Salad:
1 head lettuce, chopped
1 cucumber, sliced
1 avocado, sliced
8g (0.3 oz) fresh coriander, torn
450g (1 lb) chicken breast
For the Coriander Yoghurt Dressing:
120g (4.2 oz) Greek yoghurt
8g (0.3 oz) fresh coriander, chopped
1 lime, juiced
¼ tsp. cumin
4 tbsp. olive oil
Pinch of salt
HOW TO MAKE IT.
Step 1: Blend Up That Zesty Dressing
This coriander yoghurt dressing is ridiculously good and comes together in seconds. Just throw the yoghurt, coriander, lime juice, cumin, olive oil, and a pinch of salt into a blender or small food processor and blend until smooth and creamy. Pop it in the fridge to chill while you prep everything else.
Step 2: Grill the Chicken to Juicy Perfection
No dry, boring chicken here! Season your chicken breasts with salt and black pepper. Heat a pan with a little olive oil and grill the chicken for about 4 minutes per side, or until fully cooked. The key is to let the chicken rest for a few minutes before slicing it—this locks in all the juices and keeps it tender.
Tip: If you’re short on time, you can use pre-cooked chicken or even shredded rotisserie chicken for an easy shortcut.
Step 3: Assemble the Salad
In a large salad bowl, toss together the chopped lettuce, cucumber, avocado, and coriander. Divide the salad between serving bowls, then top each one with sliced grilled chicken.
Step 4: Drizzle & Enjoy
Take that creamy, zesty dressing out of the fridge and drizzle it generously over your salad. Toss everything together, grab a fork, and dig in!
WAYS TO MAKE THIS SALAD YOUR OWN.
One of the best things about this salad is how versatile it is. Here are some easy swaps and additions to make it suit your taste:
Switch up the protein – Swap the grilled chicken for grilled prawns, pan-seared salmon, or even tofu for a plant-based version.
Add some crunch – A handful of toasted nuts or seeds (like almonds, pepitas, or sunflower seeds) adds a satisfying crunch.
Love a bit of spice? – Add some sliced red chilli or a pinch of chilli flakes for an extra kick.
Make it a wrap – Toss everything into a whole-grain wrap for an easy grab-and-go meal.
HOW TO MEAL PREP THIS SALAD.
This salad is perfect for meal prep! If you want to make it ahead of time, here’s how to store everything so it stays fresh:
Cook the chicken in advance – Grill and slice the chicken, then store it in an airtight container in the fridge for up to 4 days.
Prep the dressing – Keep it in a sealed jar in the fridge for up to a week. Give it a good shake before using.
Chop the veggies, but leave out the avocado – Store the lettuce, cucumber, and coriander in separate containers and slice the avocado fresh when serving to avoid browning.
When you’re ready to eat, just assemble, drizzle on the dressing, and enjoy!
THE PERFECT SALAD FOR ANY OCCASION.
This Coriander & Lime Chicken Salad is one of those meals you’ll never get tired of. It’s fresh, satisfying, and packed with feel-good ingredients—perfect for a quick weeknight dinner, a meal-prep-friendly lunch, or even a summer barbecue side.
