LET'S TALK ABOUT THE STAR INGREDIENTS.
These tiny gems are rich in vitamins C and K, fibre, and antioxidants that support your immune system and skin health. They’re naturally sweet and add a vibrant pop of flavour to the crumble.
Oats provide slow-releasing carbohydrates, keeping you full and energised while helping to stabilise blood sugar levels. They’re also an excellent source of fibre to support gut health.
Using ripe banana in this recipe helps bind the crumble while adding natural sweetness, reducing the need for excess sweeteners.
Unlike refined sugars, maple syrup contains minerals like zinc and manganese and adds a lovely caramel-like flavour.
Arrowroot helps thicken the blueberry layer without altering the flavour, ensuring your crumble holds together beautifully while keeping it gluten-free if needed.
BLUEBERRY OAT CRUMBLE.
Serves: 9
Prep time: 15 minutes
Cook time: 25 minutes
2 cups (300g) blueberries
¼ cup (60ml) maple syrup
1 tbsp. arrowroot powder
3 cups (250g) rolled oats
1 ripe banana, mashed
3 tbsp. water
STEP-BY-STEP INSTRUCTIONS.
Set your oven to 175°C (350°F). Line a baking pan with baking paper for easy removal and clean-up.
In a medium bowl, use a fork to gently mash the blueberries, releasing some of their juices while keeping texture. Add the maple syrup and arrowroot powder, stirring to combine. Set aside to allow the mixture to thicken slightly while you prepare the crumble base.
Add half of the rolled oats to a food processor or blender to create oat flour. This will help bind the base while keeping the texture rustic.
In a large mixing bowl, combine the oat flour with the remaining rolled oats, mashed banana, and water. Stir until the mixture comes together.
Press ¾ of the oat mixture firmly into the prepared baking pan, creating a thin, even layer as your base.
Spread the blueberry mixture over the top, ensuring it is evenly distributed.
Crumble the remaining oat mixture on top of the blueberry layer, creating pockets of texture that will crisp beautifully during baking.
Bake for 20–25 minutes or until the top is golden brown and the blueberries are bubbling.
Allow to cool in the pan before slicing into squares. The crumble will firm up as it cools, making it easier to cut and serve.
PRACTICAL TIPS TO MAKE THIS RECIPE EFFORTLESS.
Use frozen blueberries: If fresh blueberries aren’t in season, frozen ones work just as well. Just thaw them beforehand.
Make it gluten-free: Swap regular rolled oats for certified gluten-free oats if needed.
Add a crunch: Sprinkle chopped nuts or seeds on top before baking for added texture.
Meal prep friendly: Store slices in an airtight container in the fridge for up to 5 days or freeze for up to 3 months for a quick snack or breakfast option.
Sweetness level: Taste your blueberries before adding maple syrup. If your berries are extra sweet, you can reduce the maple syrup slightly.
SEASONAL WAYS TO ENJOY YOUR BLUEBERRY CRUMBLE.
This crumble is versatile enough to adapt for any time of year, ensuring you always have a comforting, nourishing treat on hand.
Serve warm with a dollop of Greek yoghurt or a splash of warm milk for a comforting dessert or breakfast.
Enjoy with a cup of herbal tea or chai for a cosy afternoon pick-me-up.
Add warming spices like cinnamon or nutmeg to the oat mixture for extra flavour.
Chill slices and serve cold with a spoonful of coconut yoghurt and a drizzle of honey.
Pair with a cold brew coffee or iced herbal tea for a refreshing snack.
Add fresh mint on top for a burst of freshness.
HOW TO TURN THIS RECIPE INTO A NOURISHING SALAD FOR ALL SEASONS.
You might not think of a crumble when planning a salad, but with a little creativity, you can use your Blueberry Oat Crumble to build a fun, nourishing breakfast or dessert salad.
Layer baby spinach or mixed greens in a bowl.
Add fresh berries or sliced stone fruit.
Crumble pieces of your Blueberry Oat Crumble on top for crunch and natural sweetness.
Drizzle with a yoghurt and lemon dressing.
Use warm stewed fruit (apples or pears) as a base in a bowl.
Top with warm slices of the crumble.
Add a spoonful of Greek yoghurt and a sprinkle of cinnamon.
Perfect as a breakfast salad on a cold morning.
