THAI GREEN GODDESS SOUP RECIPE.
Serves 4 Prep 10mins Cook 30 mins
2 tbsp. olive oil
2 shallots, chopped
4 cloves garlic, chopped
2 tsp. ginger, chopped
1 green chilli, deseeded & sliced
1 lemongrass, chopped
4 cups vegetable stock
¾ tsp salt
4 kefir lime leaves (optional)
1 head broccoli
2 medium potatoes, peeled, and chopped
½ cup coconut milk, full-fat
1 tsp coconut sugar
200g spinach
1 bunch coriander
3 tbsp fresh lime juice
2 tsp. fish sauce
To Garnish:
Roasted peanuts (optional)
STEP-BY-STEP COOKING INSTRUCTIONS.
Step 1: Prepare Your Ingredients
Start by prepping all your ingredients. Chop the shallots, garlic, ginger, green chilli, and lemongrass. Peel and chop the potatoes, and cut the broccoli into florets. This makes the cooking process smoother and quicker.
Step 2: Sauté the Aromatics
In a large pot, heat the olive oil over medium heat. Add the chopped shallots, garlic, ginger, green chilli, and lemongrass. Sauté until fragrant and the shallots become translucent, about 3-4 minutes.
Step 3: Add the Broth and Vegetables
Pour in the vegetable stock and add the salt. If you're using kefir lime leaves, add them now. Bring the mixture to a boil. Add the chopped potatoes and broccoli florets, then reduce the heat to a simmer. Let it cook until the vegetables are tender, about 15-20 minutes.
Step 4: Blend the Soup
Remove the kefir lime leaves if used. Use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches.
Step 5: Stir in the Coconut Milk and Seasonings
Return the blended soup to the pot. Stir in the coconut milk, coconut sugar, spinach, and chopped coriander. Let it simmer for another 5 minutes until the spinach is wilted and the flavours are well combined.
Step 6: Final Touches
Add the fresh lime juice and fish sauce, stirring well to incorporate. Taste and adjust the seasoning if needed.
Step 7: Serve and Garnish
Ladle the soup into bowls and garnish with roasted peanuts for a delightful crunch, if desired. Serve hot and enjoy the burst of flavours!
