500g / 1.1 lb lean beef mince

1 onion, finely chopped

3 garlic cloves, finely chopped

½ cup (25g) ginger, peeled and finely chopped

½ cup (15g) fresh coriander, leaves and stalks chopped separately

2 tbsp. curry powder

400g / 14 oz. can chopped tomatoes

200ml beef stock

200g / 7 oz. tub natural Greek yoghurt

2 cups (300g) peas, frozen

ALL YOU DO:

  1. Begin by browning the beef mince in a heated pan.

  2. Add aromatics: onion, garlic and ginger. Cook until they're soft and golden, approx 6-8 minutes.

  3. Introduce the curry powder and coriander stalks, cooking for another 2-3 minutes, while stirring, allowing the spices to release their flavours.

  4. Pour in the chopped tomatoes and beef stock. After seasoning, bring to a gently boil, then reduce the heat, and allow to simmer uncovered for 20 minutes, stirring occasionally.

  5. Final touches include adding in the frozen peas and 1 tbsp of yoghurt, and the chopped coriander leaves allowing to cook for a further 2 mins or until the peas are soft.
