Frozen Yoghurt Bark (Easy & Healthy!)

October 21, 20246 min read

I’m obsessed with this Frozen Yoghurt Bark! It’s the ultimate easy, healthy snack that you can enjoy any time of day. Whether you’re looking for a quick pick-me-up, a post-workout treat, or something light and refreshing after dinner, this yoghurt bark hits the spot every time.

And the best part? You can customise it with your favourite toppings! It’s like having dessert but without the guilt.

WHY I LOVE THIS FROZEN YOGHURT BARK.

Healthy and Light: Packed with protein from the Greek yoghurt and wholesome toppings like granola and fresh fruit, this bark satisfies your sweet tooth without the sugar crash.

Super Simple to Make: Only five ingredients and no cooking or baking required. Just mix, spread, freeze, and enjoy!

Perfect for Meal Prep: Make a batch, freeze it, and have a healthy snack ready to go all week long.

Customisable: The flavour combos are endless—just switch up the toppings to whatever you’re in the mood for.

Let’s dive into how you can make this super easy and delicious treat!

WHAT IS FROZEN YOGHURT BARK?

If you’ve never heard of Frozen Yoghurt Bark, think of it as a healthier, lighter version of a chocolate bark. Instead of melted chocolate, we’re using creamy Greek yoghurt as the base and then adding a few natural sweeteners and toppings to make it feel indulgent.

Once you’ve spread everything out in a baking dish, pop it in the freezer for a few hours until it sets. Then, just break it into bite-sized pieces and store them in the freezer to enjoy whenever you want. It’s refreshing, packed with protein, and a total game-changer for healthy snacking.

FROZEN YOGHURT BARK INGREDIENTS.

Here’s what you need for the base of the bark:

Full-Fat Greek Yoghurt: Greek yoghurt is loaded with protein and probiotics, making it the perfect creamy base for this frozen treat. The full-fat version adds a rich, velvety texture that makes it feel extra satisfying.

Honey: This is your natural sweetener that gives just the right amount of sweetness without overloading on refined sugars. You could swap honey for maple syrup or agave if you prefer.

Vanilla Extract: Just a teaspoon brings out the flavour of the yoghurt and makes the bark taste a little more like dessert!

FOR THE TOPPINGS.

Strawberries: I love the pop of colour and natural sweetness that strawberries add to this bark. You can substitute with any fresh fruit you like—blueberries, raspberries, kiwi slices, or even mango would be delicious.

Granola: I used my homemade granola (you can find the recipe here!), which adds a nice crunch and extra fibre to the bark. Store-bought works too, just make sure it’s a healthy, lower-sugar option.

Pistachios: Crushed pistachios add a satisfying salty crunch that pairs perfectly with the sweetness of the yoghurt and fruit. Feel free to swap them with any nut you prefer—almonds, cashews, or walnuts would all work.

HOW TO MAKE FROZEN YOGHURT BARK (Step-by-Step)

This Frozen Yoghurt Bark recipe couldn’t be easier. It’s a no-bake, no-fuss recipe that comes together in minutes.

Ingredients:

Frozen Yoghurt Bark

Makes 16 squares

Prep time: 10 mins Chill time: 3 hrs

750g (1.6 lbs) full-fat Greek yoghurt

80ml (2.7 oz) honey

1 tsp. vanilla extract

4 strawberries, thinly sliced

90g (3.2 oz) granola (see my recipe here)

2 tbsp. pistachios, crushed

INSTRUCTIONS.

  1. Prepare Your Dish: Start by lining a 10x15″ (25x38cm) cake tin or freezer-friendly dish with baking paper. This will make it easy to remove the bark once it’s frozen.

  2. Make the Yoghurt Base: In a medium bowl, mix together the Greek yoghurt, honey, and vanilla extract. Make sure everything is well combined, then pour the mixture into your prepared dish. Use a spatula to spread it out evenly, making sure the layer isn’t too thick or too thin.

  3. Add Your Toppings: Now for the fun part—toppings! Arrange your thinly sliced strawberries evenly across the yoghurt layer. Then sprinkle the granola and crushed pistachios over the top, making sure every bite gets a little bit of everything.

  4. Freeze: Place the dish in the freezer for at least 3 hours, or until the yoghurt is fully frozen and firm. The longer, the better!

  5. Cut and Serve: Once frozen, remove the bark from the freezer and carefully lift it out using the baking paper. Break or cut it into bite-sized pieces and enjoy!

Store the pieces in a sealed container in the freezer, and they’ll keep for up to two weeks (if they last that long!).

FROZEN YOGHUTY BARK INGREDIENT SUBSTITUTIONS.

What I love about this recipe is how versatile it is! Here are some ideas to switch it up and make it your own:

Yoghurt: I prefer full-fat Greek yoghurt for its texture and creaminess, but if you want to lower the fat content or are looking for a dairy-free option, coconut yoghurt or any plant-based yoghurt will work.

Sweeteners: If you want to avoid honey, you can substitute with maple syrup, agave, or even a few drops of stevia if you’re cutting sugar altogether.

Toppings: Strawberries, granola, and pistachios are my go-to, but the sky's the limit. You can try blueberries, raspberries, shredded coconut, dark chocolate chips, chia seeds, or even dried fruit for different flavour combos.

If you're feeling extra fancy, you can drizzle a bit of melted dark chocolate over the top before freezing for that extra hit of decadence.

WHY FROZEN YOGHURT IS PERFECT FOR HEALTHY SNACKING.

This Frozen Yoghurt Bark is packed with protein, healthy fats, and fibre—all from natural ingredients. It’s a snack that doesn’t just satisfy your sweet tooth but keeps you feeling full and energised. Plus, it’s way better than grabbing a sugary snack or chocolate bar.

I love keeping a batch in the freezer to grab whenever I need a little pick-me-up. It’s also a hit with kids and makes for a fun, healthier dessert option that doesn’t feel like you’re missing out on anything.

A FEW TIPS FOR MAKING THE BEST FROZEN YOGHURT BARK.

Spread it evenly: You want the yoghurt layer to be an even thickness, so each piece freezes properly. Not too thick, not too thin.

Freeze thoroughly: Make sure to freeze the bark for at least 3 hours. The longer it stays in the freezer, the firmer it will be.

Serving tip: If you want the bark to soften just a bit, let it sit out for a minute or two after taking it out of the freezer.

PEFRECT FOR MEAL PREP AND HEALTHY SNACKING.

This Frozen Yoghurt Bark is a meal prep hero. It’s so easy to make a big batch and have a ready-to-eat snack whenever you need something quick, refreshing, and healthy. Whether you’re enjoying it for breakfast, a midday snack, or even dessert, it’s a light and satisfying treat that fits into any routine.
