Serves: 2 people
Prep time: 15 minutes
Cook time: 10 minutes
For the Pancakes:
80g (2.8 oz) wholemeal flour
⅔ tsp. baking powder
160ml (5.4 fl oz) whole milk
1 egg
2 tbsp. Greek yoghurt
For the Avocado Spread:
1 avocado, halved, pitted & mashed
¼ lime, juiced
2 tbsp. Greek yoghurt
½ tsp. chilli flakes
2 tsp. sesame seeds, roasted
METHOD.
In a bowl, mix the wholemeal flour and baking powder.
In a separate bowl, whisk the egg with milk and Greek yoghurt. Slowly combine with the dry ingredients to form a smooth batter.
Heat a non-stick pan over medium heat and lightly grease with butter or oil. Pour small portions of the batter into the pan to form pancakes. Cook for about 2 minutes per side or until golden brown.
In another bowl, mash the avocado and mix it with lime juice, Greek yoghurt, and chilli flakes.
Once the pancakes are ready, spread the avocado mixture on top.
Sprinkle with sesame seeds, and top with salad greens and pumpkin or flaxseeds if desired.
Serve immediately and enjoy!
THE POWER OF A SAVOURY BREAKFAST.
Most people think of pancakes as a sweet breakfast loaded with maple syrup, but switching things up with a savoury version can be a game-changer.
Keeps Blood Sugar Stable – The mix of protein, fats, and fibre helps prevent energy crashes, keeping you satisfied for longer.
Rich in Nutrients – Wholemeal flour provides fibre, avocado delivers heart-healthy fats, and eggs supply high-quality protein.
More Satisfying Than Sugary Options – If you find that sweet breakfasts leave you hungry an hour later, these pancakes are a great alternative.
HOW TO MAKE IT YOUR OWN.
One of the best things about this recipe is its versatility. Here are a few ways to customise your pancakes:
Boost the Protein – Top with a poached egg, smoked salmon, or crumbled feta.
Add More Greens – Serve with rocket, baby spinach, or microgreens for extra nutrients.
Spice It Up – Add paprika or cumin to the batter for more depth of flavour.
Make it Dairy-Free – Swap the Greek yoghurt for coconut yoghurt and use plant-based milk.
MEAL PREP & STORAGE TIPS.
If you love meal prepping, these pancakes are a fantastic make-ahead option. Here’s how to store them:
Fridge – Store cooked pancakes in an airtight container for up to 3 days.
Freezer – Layer pancakes with parchment paper in a sealed container and freeze for up to 3 months.
Reheating – Warm them in a dry pan over low heat or pop them in the toaster for a crispy texture.
The avocado spread is best made fresh, but you can store it in the fridge for a day or two with a squeeze of extra lime juice to prevent browning.
THE PERFECT WEEKEND BRUNCH.
If you love making special breakfasts on the weekend, these pancakes are perfect for brunch with family and friends. Serve them on a platter with a variety of toppings so everyone can customise their own plate.
Pair them with a Green Goodness Smoothie Bowl or a side of Feta Egg Bake for an extra nourishing meal.
